Chorizo scramble!
Sorry I’ve been so lazy and not posting recipes.  I’ve been eating like a dump truck but am restarting a whole30 challenge today!  I recently moved and have been traveling a lot so my schedule has been hectic and there’s been no time to cook.  I discovered an awesome butchery in my new neighborhood though so I’ve been eating lots of great homemade sausage like this chorizo.  Enjoy!
Ingredients
1 or 2 chorizo links (raw or cooked…doesn’t matter much), casing removed, broken up
1/2 onion diced
bunch of spinach rough chopped
2 eggs
Directions
throw your onion and chorizo in a heated pan with some coconut oil
cook covered 5-10 minutes to help onions soften
cook uncovered another 5 minutes until onions are caramelized to your liking
throw in spinach and cook quickly until just starting to wilt
stir in 2 scrambled eggs and toss quickly, being careful not to overcook.
